Creamy Coconut Spinach Chicken
These chicken breasts come out super tender and juicy. The coconut adds a lovely flavour but keeps it clean so you can stay on track with your diet. It won’t hurt your diet and the meal-prep gives you something to grab when you you don’t time to cook a whole meal.

  1. Heat butter in a pan
  2. Add onions and fry until soft and light brown
  3. Add spinach, reduce heat to medium
  4. As the spinach starts to shrink, pour in the coconut cream
  5. Add the chicken breasts to the pan
  6. Flip over every 3 minutes until cooked through
  7. The sauce reduces a lot as it is absorbed into the chicken, making it juicy
  8. Serve with zucchini ribbons or your choice of other veg
