Lemon Coriander Grilled Chicken
This is a quick and simple alternative to plain grilled chicken breasts, without sacrificing on clean eating. Coriander and a squeeze of lemon adds a boost of flavour so you can use these in salads or serve with rice and veggies. Perfect to eat for fitness training. If you really hate coriander you can swap it for oregano 😉

  1. Heat oil in a pan
  2. Chop up coriander finely
  3. Add half of the coriander into the sizzling oil
  4. Cook for 1 minute
  5. Add chicken breasts onto lightly cooked herbs
  6. Sprinkle the rest of the coriander onto chicken
  7. Flip chicken pieces every 3 minutes
  8. Just before the chicken is cooked through, squeeze lemon all over, on both sides
  9. Serve in a salad or with some side veg
